Kale and Coconut Recipe

Cooking Instructions

What you will need

  • Gedera & Co. Toasted Coconut and Kale cooking kit
  • 2 tbs of boiling water
  • 1 clove garlic
  • 1 tbs coconut oil (or any other oil)
  • 1/2 Onion thinly sliced

Method

  • Chop the Garlic onion and set aside
  • Wash dry and finely chop the kale. (you can use the food processor if you have one, this is much easier)
  • Empty the coconut spice blend pouch in to a small bowl and add the 2 tbs of boiling water and set aside
  • Add 2 tbs of oil in a heavy based pan let it heat up, put the aromatics in the oil and fry for 1 minute. Add garlic and onion fry for 2 minutes until onions are cooked.
  • Add the spice mixture to the pan and cook for 2 more minutes.
  • Add the chopped Kale and mix well so the spice onion mixture is incorporated. Cook for 2-3 minutes and remove from pan, put in to a serving dish so that it stops cooking and will be a lovely bright green.

Note: Pandan leaves are edible but they are tough and fibrous. They add an amazing aroma but are not pleasant to eat. Please remove them before enjoying the dish.
