Recipe: Chicken Katsu

AT THE GEDERA TABLE #13: The crispy, savoury recipe you need to try

Between you and me, I’ve never been much of a Valentine’s Day person. But that doesn’t mean I don’t love to treat my husband, loved ones, and girl friends to good, nourishing food or baked goods that will put a smile on their faces. It’s just more of an everyday thing for me! 

If Valentine’s weekend crept up on you (it certainly did for me!), I have a delicious recipe you need to try. A few newsletters ago, I mentioned that I love to do a “fake-away” meal on Friday nights to surprise & delight the kids. This time, it’s crispy, savoury Chicken Katsu — with a Sri Lankan twist. Whether it’s for a date night in or as a soul-nourishing weekend meal, it’s so, so good. 

CHICKEN KATSU RECIPE

I. Make chicken schnitzel however you like it. (I buy them from the butcher and double crumb them with panko crumbs for a great crunch!). You can substitute with your favourite soy or plant based chick’n for a vegetarian-forward meal. 
 
II. For a Sri Lankan inspired sauce / gravy, you will need 1 pack of Gedera & Co. Beef Curry Kit. Why Beef Curry? It adds such a rich flavour to the gravy because of the roasted spices (reminder: the ingredients in the kit are vegetarian!).
 
III. Follow these steps for the gravy: 
 
1.) Heat 2 tsp of oil and then add the Spice Mix to the pan and cook for 1 minute
 
2.) Add 1 cup of water and keep the pan in medium heat for 2-3 minutes
 
3.) Pour the Coconut Milk Powder mix to a bowl and add 1 tsp of corn flour to the same bowl
 
4.) Mix in 1/2 cup of room temp water and mix thoroughly until no lumps. Add to the pan
 
5.) Mix well and cook for 5-8 mins or until the sauce thickens and becomes like a gravy consistency

It’s a super simple way to make dinner time a little different and flavourful.
